From baked goods to beverages, this time of year is all about pumpkin. The subtle sweetness of this orange-fleshed vegetable pairs beautifully with warming spices. Think: cinnamon, nutmeg, ginger and clove. Together, they become ‘Pumpkin Spice,’ also known as autumn’s favorite spice blend.
When the days turn crisp, I like to assemble my own supply of Pumpkin Spice for when the baking mood strikes. Beyond the classic four spices mentioned above, I also like to add a few grinds of cracked black pepper, an unexpected kick in a familiar blend. This batch of Pumpkin Spice will see you through a few recipes, depending on quantity requirements.
You will need: 1/4 cup of ground cinnamon, 1 tablespoon of ground ginger, 1 tablespoon of ground nutmeg, 1 ½ teaspoons of ground cloves, ¼ teaspoon of freshly ground black pepper.
Combine all ingredients in a bowl and stir to mix. Store in a re-sealable container for later use.
